Beef enchiladas are one of the most popular Mexican dishes. It is not only tasty, but also very easy to make. There are many variations of the recipe for beef enchiladas, but this one is a classic. This recipe will make enough for 8 servings and will take about an hour to prepare and cook. So, let's get started!

Ingredients

For this recipe, you will need the following ingredients:

  • 1 pound of ground beef
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of ground cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of ground oregano
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 2 cups of enchilada sauce
  • 8 (8-inch) flour tortillas
  • 1 cup of shredded cheese
  • 1/4 cup of chopped cilantro
  • 1/4 cup of chopped green onions
  • Sour cream for serving (optional)

Instructions

1. Preheat your oven to 350°F (175°C).

2. In a large skillet, over medium-high heat, cook the ground beef, onion, and garlic until the beef is cooked through and the onion is softened, about 10 minutes. Make sure to break up the beef as it is cooking.

3. Add the cumin, chili powder, oregano, salt, and pepper and stir to combine. Cook for another minute or two.

4. Pour the enchilada sauce into the skillet and stir to combine. Let the mixture simmer for about 5 minutes.

5. Place a tortilla on a plate and spoon some of the beef mixture onto the center of the tortilla. Sprinkle some of the cheese on top and then roll up the tortilla. Place it in a 9x13 inch baking dish.

6. Repeat with the remaining tortillas and beef mixture. The baking dish should be filled with the rolled up enchiladas.

7. Pour the remaining enchilada sauce over the top of the enchiladas and sprinkle with the remaining cheese.

8. Bake the enchiladas in the preheated oven for 25 minutes, or until the cheese is melted and the sauce is bubbling.

9. Remove the enchiladas from the oven and let cool for a few minutes. Sprinkle the cilantro and green onions over the top and serve with sour cream, if desired.
